Ammamma's Potato Koora

Every Sunday, my mom's side of the family goes to visit my grandparents. After our busy and chaotic weeks, we love coming to spend time together. Not only that, but also we love THE FOOD.
Ammamma (my grandma) makes the best Southern Indian food you will ever eat. One of our favorite, yet surprisingly simple recipes of hers is Potato Koora.
During the COVID-19 pandemic, unfortunately we are unable to and visit my grandparents, but we still zoom with them weekly or more. To bring some normality back into our lives, we decided to make Ammamma's Potato Koora during quarantine. We will never be able to make it up to the par that she does, but we can sure try!
Typically this Koora can be eaten with poori (see recipe to come!), but I think it is just as good alone or with plain rice.
